The verdict is in. We calibrated with EVOO to 27%. The honey is at 21%. A jar from our first draw 2 years ago is at 17%.
As I suspected, this honey is too watery. In the fridge it has gone!
We have a food dehydrator. Has anyone used one to lower the water content of their honey? Since it was suggested above, I thought I would ask.

We put a small amount of honey in a custard dish and after a few hours in the dehydrator, it’s gone from 21% to 19%!

People dehydrate frames of honey using a fan in an air-conditioned room, so you may be fine. I have no experience personally, but I admire your innovation and tenacity.

Refrigerated air conditioning, in cool or dry mode to be specific, not heat.
