Filtering Honey

I was thinking that the preference for a light or dark honey was also cultural. I think in some parts of the world lighter honey is associated with tempered or water down honey.

On my patch, my bees collect mostly caramel coloured honey. Last year I had a few frames of really dark honey and the first thing my wife said, without tasting it, was it was great looking honey. When I asked her why she said it must be sweeter. I think in her head she saw it as more ‘concentrated’, therefore sweeter.

Although it tasted different, it wasn’t sweeter at all.
