I have nucs coming, will be putting an empty box on top of my inner cover to feed them and putting the gable roof over the empty box - so that will expose my inner cover sides to the elements… I was planning on treating at least the edges but what are people’s thoughts?
I usually do mine in a stack with other boxes. Just the outer edges, as you say. No need to do the horizontal flat surfaces.
On the other hand, if you don’t have time, it will be fine for a season. After that, you may need to repair or replace the inner cover

Hey coach! Welcome back, and my thought is that you could skip the extra empty box and put a baggie feeder under the gable roof instead.
